From Cuzco, in the province of Inkawasi, Paulina Maytan Casa brings us her amazing award winning Washed Geisha.

Like many coffees from Cusco, Inkawasi was hit by unstable rainy conditions this season. Heavy rains caused mature coffee cherries to fall from the trees, while fermentation and drying became increasingly unreliable.

 

Paulina faced this challenge head-on. When it was time to harvest, she told us that fermenting her coffee as she had the previous year felt too risky. Unpredictable temperatures could easily lead to over-fermentation, and persistent rain introduced multiple risks during drying.

 

Because of this, she decided to produce a traditionally washed coffee. She waited patiently for the right week to harvest, then de-pulped, washed, and began drying all on the same day. This approach gave her the best chance at a clean, predictable result under difficult conditions.

 

I was genuinely excited by this decision. It meant we would be able to experience the terroir and genetics of Paulina’s Geisha in their purest form, and gain a deeper understanding of Inkawasi Geishas as a whole.

 

The result has been a pleasant surprise: a true tour de force of a traditionally washed Geisha. No fermentation influence, just terroir and genetics. 

 

We’re excited to bring this coffee to market, especially as it’s becoming increasingly difficult to find a washed Inkawasi Geisha of this caliber.

 

Fragrance & Flavor:
A Complex, sweet and floral profile, featuring a strong note of chamomille and jasmin, honey and apple. Complemented by citric fruits like orange and tamarind.

 

Aftertaste:
Long-lasting, with a floral and honey finish.

 

Body: 

Super silky body.

 

Acidity:
Bright and strong citric acidity, enhancing vibrancy.

 

Meet Paulina: A Story of Resilience and Coffee Excellence

 

Paulina (47), a first-generation coffee producer, hails from the Amaypata-Incawasi region in Cusco, one of the finest coffee-growing areas in Peru.

 

Her coffee journey began when, at 40, she became a single mother and decided to return to Amaypata to be closer to her family. Seeking new opportunities, she saw coffee as a promising venture. Paulina enrolled in a government program that provided land for coffee cultivation, receiving 1.5 hectares with local corporate support.

 

Her story is truly inspiring. Today, Paulina is proud that the success of her coffee is helping support her daughters, who are studying in Cusco. After the 2024 Incawasi Coffee Competition, where her coffee ranked #6, Prospect purchased her coffee.

 

We are committed to helping her sustain this success by providing the necessary materials for her next harvest.

Paulina requires GrainPro bags for consistent fermentation, as she currently uses plastic bags that don’t offer the same reliable results. These bags are crucial for ensuring high-quality fermentation.

    This coffee has not undergone any fermentation. It is traditionally washed, with harvesting, depulping, washing, and drying all carried out on the same day.
